Brewing teas & decoctions
The simplest way in — steeping leaves, or simmering roots and bark.
Know your material
Teas suit delicate parts — leaves, flowers, aromatics. Decoctions are for tough roots, bark, seeds and berries that need longer extraction.
For a tea: measure and steep
Use 1–2 tsp of dried herb per cup of just-boiled water. Cover the cup while steeping — aromatic compounds escape in steam.
Steep time matters
5 minutes is light and pleasant. 10–15 minutes is stronger. Beyond 20 many herbs turn bitter without much added benefit.
For a decoction: simmer gently
Add herb to cold water, bring to a gentle simmer, keep the lid on and maintain 20–40 minutes. Top up with water as needed.
Strain and enjoy
Strain into a cup. Drink warm, or allow to cool. Most teas don't keep well — brew fresh each time if you can.
